We use bones from all over the body, including attached ligaments and tendons. These bones include the shoulder, upper femur, lower femur, hip, shank, ribs, hock, whole knuckles and oxtail. All of these bones work together to create a unique flavor profile and an extremely healthy broth.

Each bone has its own unique characteristics that we must consider when we make this broth. For example, the femur, being a larger bone, has significantly more marrow than any of the smaller bones in the body.
