Instructions
  1. Soft cook 2 eggs: Place eggs in a pot with cold water. Bring water to a simmer and simmer for 3 minutes. Remove eggs to cold water and peel.
  2. Flatten sausage into 2 oblong disks.
  3. Wrap sausage disks around each egg and seal tightly
  4. Set up a breading station: flour in the first bowl, beaten egg in the second bowl and breadcrumbs in the third bowl.
  5. Bread each egg by rolling it in the flour, dipping it in the egg and then rolling it in the breadcrumbs.
  6. Heat 2-3 inches of oil in a deep pot to about 275°F, hot enough to cook the sausage without burning the outside.
  7. Place the eggs in the pot and cook for about 6-8 minutes and serve.
