- Soft cook 2 eggs: Place eggs in a pot with cold water. Bring water to a simmer and simmer for 3 minutes. Remove eggs to cold water and peel.
- Flatten sausage into 2 oblong disks.
- Wrap sausage disks around each egg and seal tightly
- Set up a breading station: flour in the first bowl, beaten egg in the second bowl and breadcrumbs in the third bowl.
- Bread each egg by rolling it in the flour, dipping it in the egg and then rolling it in the breadcrumbs.
- Heat 2-3 inches of oil in a deep pot to about 275°F, hot enough to cook the sausage without burning the outside.
- Place the eggs in the pot and cook for about 6-8 minutes and serve.
