Ingredients
- 1 Lb Arizona Grass Raised taco meat
- Head of iceberg lettuce
- 3 Tbsp Coconut Oil
- 1 Yellow onion, finely chopped
- 2 Cloves Garlic minced
- 1 Can Organic tomato sauce Or fresh organic red tomatoes
- 3/4 Cup Colby cheese, shredded
- Salt
- Pepper

Instructions
- In a skillet over med-high heat, cook the onion in the oil for several minutes
- Add the taco meat and cook til done.
- Add the minced garlic and cook for another 2 mins
- Mix in the tomato sauce.
- While the mixture is warming, take the head of iceberg lettuce and use several of the large outside leaves to form 3 to 4 lettuce bowls. Shred the rest of the head.
- Place the shredded lettuce in the lettuce bowls, evenly distributing between them. Divide the beef mixture between the bowls and add the cheese as a topping.
