You may have heard the term “Tallow” used on your favorite cooking sites, but the question of “how or why” to use it still lingers. We’re here to help!
Let’s start at the beginning! Tallow is rendered beef fat and slow-rendered during a 12 hour process. Our Tallow comes directly from our cows who have been 100% grass fed and grass finished by roaming millions of acres of Az open range land (yes there IS grass in Arizona).
When it comes to searing or frying your steak, choosing the right cooking fat makes all the difference, and there’s a reason Beef Tallow has been around for generations.
Beef Tallow has a high smoke point which means it prevents burning at searing temperature. It’s rich in flavor to enhance the steak’s taste with that deep, beefy flavor. Beef Tallow provides that excellent browning to achieve a perfect crust on the steak, and it’s filled with healthy, naturally saturated fats that are stable at high heat.
Cook a Seared Steak using Arizona Grass Raised Beef Tallow:
Ingredients:
- One Ribeye, New York Strip, or Filet from Arizona Grass Raised Beef
- 1-2 tbsp Arizona Grass Raised Beef Tallow
- Salt & pepper (or your favorite steak seasoning)
- Optional: garlic cloves, fresh thyme, and butter for basting
Step 1: Prepare the Steak
- Take the steak out of the fridge 30-45 minutes before cooking to bring it to room temp.
- Pat dry with a paper towel and season generously with salt and pepper.
Step 2: Heat the Cast Iron Skillet
- Place the skillet over medium-high heat for a few minutes.
- Add 1-2 tbsp of beef tallow and let it melt completely.
Step 3: Sear the Steak
- Place the steak in the hot skillet and don’t move it for 2-3 minutes to develop a crust.
- Flip and sear the other side for another 2-3 minutes.
Step 5: Rest & Serve
- Remove the steak from the skillet and let it rest for 5-10 minutes before slicing.
- Slice against the grain and enjoy!
