We love making Carne Asada with the Skirt and Bavette which both have similar muscle fibers. Skirt steak can cooked in a pan, with best results using grass fed beef tallow to caramelize and sear the outside while retaining moisture.

The meat looked great. Nice color, nice cut. Marinated it for several hours, planned on steak tacos. The meat cooked nicely, medium rare, great char, great taste. Turned out very tough however. Not sure what went wrong. Disappointing. Yes, cut against the grain.
